Melt the Butter:
In a medium saucepan, melt the butter over medium heat.
Sauté the Shallots:
Add the sliced shallots to the melted butter and sauté for about 3-4 minutes, until they become soft and translucent.
Add Sfiziosì Artichoke hearts:
Stir in the chopped artichoke hearts and cook for an additional 5 minutes, allowing the flavors to meld together.
Blend the Mixture:
Pour in the warm stock and using a hand blender, blend the mixture until smooth and creamy.
Return to Heat and let it thicken:
Pour the blended mixture back into the saucepan over low heat. Gradually whisk in 1 to 2 tablespoons of flour, stirring continuously until the sauce thickens and reaches a silky texture.
Season and serve:
Taste and season with olive oil, salt and pepper as needed, before drizzling this luscious artichoke gravy over your turkey!
