Chop the Cod:
Cut the fresh cod fillets into bite-sized chunks, approximately 2 inches in size.
Flour the Cod:
Place some all-purpose flour in a shallow dish. Dredge each piece of cod in the flour, ensuring they are evenly coated. Shake off any excess flour.
Fry the Cod:
In a large skillet, heat a couple of tablespoons of olive oil over medium heat.Once the oil is hot, add the floured cod chunks to the skillet. Fry them for about 2-3 minutes on each side until they are lightly golden brown. Remove the cod from the skillet and set aside.
Chop Sundried Tomatoes and add them:
Thinly slice the sundried spicy tomatoes. In the same skillet, add a little more olive oil if needed. Add minced garlic cloves and sauté for about 1 minute until fragrant, being careful not to burn them. Stir in the chopped sundried tomatoes and cook for an additional 2 minutes, allowing their flavors to meld.
Combine and serve:
Gently add the fried cod back into the skillet with the sautéed tomatoes and garlic. Cover the skillet with a lid and let everything cook together for about 5 minutes on low heat. Ready to enjoy this flavorful meal?
