Crispy artichoke pasta

If you’re looking for a unique and flavorful pasta dish, this crispy artichoke pasta is the perfect choice. 12 oz (340g) spaghetti or linguine 1 pack of Sfiziosi artichokes hearts, drained and quartered 3 tbsp olive oil 2 tbsp unsalted butter 4 garlic cloves, minced 1/2 tsp red pepper flakes (optional, for heat) 1/2 cup grated Parmesan cheese 1/4 cup chopped fresh parsley Zest of 1 lemon Juice of 1/2 lemon Salt and black pepper to taste 1/4 cup toasted breadcrumbs (for extra crunch)

Instructions

Step 1: cook the pasta
Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta. Set the pasta aside while you prepare the crispy Sfiziosi artichokes hearts. Step 2: crisp the artichokes hearts
Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the Sfiziosi artichokes hearts in a single layer and cook for about 4-5 minutes on each side until golden and crispy. Transfer the crispy artichokes to a plate and set aside. Step 3: make the sauce
In the same skillet, reduce the heat to medium and add 1 tablespoon of olive oil and 2 tablespoons of butter. Add minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant. Return the cooked pasta to the skillet and toss to coat in the garlic-butter sauce. Add grated Parmesan, lemon zest, and lemon juice, stirring to combine. If needed, add a splash of reserved pasta water to loosen the sauce. Step 4: assemble and serve
Gently fold in the crispy Sfiziosi artichokes hearts. Season with salt and black pepper to taste. Sprinkle with toasted breadcrumbs, fresh parsley, and extra Parmesan for added flavor and crunch. Serve immediately and enjoy!

Use high-quality artichokes: Opt for canned or jarred artichokes in water or brine (not oil) for the best crisping results.
Don’t overcrowd the pan: Frying the artichokes in a single layer ensures maximum crispiness.
